We bring you non-dried dates in the Rutab stage — the third of the four ripening phases of date fruit:

Rutab

Fresh dates are at their best in the Rutab stage. They begin to soften and turn light brown as tannins break down and sugars are released. Rutab dates are deliciously soft and juicy, with a moisture content of around 40%, making them a truly unique delicacy. These dates must be stored at cool temperatures to maintain their freshness. Some of the varieties harvested at this stage include Medjool, Kholas, Sukkari, and Wannana.
